Throwback Thursday ~ Chubby Hubby Truffles

I absolutely love truffles because they're incredibly easy to make and so delicious! sixsistersstuff.com always has yummy and easy recipes to make and as always, this recipe didn't disappoint!


 
Chubby Hubby Buckeye Truffles Recipe:
(Recipe from The Brown Eyed Baker)
Yield: About 18 truffles
Prep Time: 20 minutes | Chill Time: 1 hour, total

1½ cups pretzel pieces
½ cup creamy peanut butter
1 tablespoon unsalted butter, at room temperature
2 tablespoons light brown sugar
Pinch of salt
3 tablespoons powdered sugar
1 cup milk or semisweet chocolate chips
1 tablespoon vegetable shortening

1. Put the pretzel pieces into a resealable plastic bag and crush into very small bits (a rolling pin works great for this).
2. In a small bowl, combine the peanut butter, butter, brown sugar and salt. Stir until all of the ingredients are completely blended and smooth. Add the pretzel bits to the peanut butter mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.
3. Line a small baking sheet with wax paper. Using a small cookie scoop, or about 2 teaspoons worth of peanut butter mixture, gently shape into a ball with your fingertips. Place the ball on the wax paper-lined cookie sheet and repeat with the remaining peanut butter mixture. Place the baking sheet into the refrigerator and chill for at least 30 minutes.
4. When ready to dip the truffles, microwave the chocolate chips and vegetable shortening together in a small bowl at 50% power in 30-second increments, stirring after each, until completely melted and smooth.
5. Working one at a time, dip one peanut butter-pretzel ball into the melted chocolate and use a fork to roll it around, ensuring that it is completely coated with chocolate. Let any extra chocolate drip off and place back on the wax paper-lined sheet. Repeat with all of the peanut butter-pretzel balls.
6. Return the baking sheet to the refrigerator and again chill for at least 30 minutes. Garnish with a drizzle of melted peanut butter and crushed pretzels, if desired. Store in an airtight container in the refrigerator.

Our Baby Story

After months and months of waiting, our little bundle of joy is here! Taylor was born on December 15, 2013 at 9:02 am. Weighing in at 7.3 pounds, 20 inches, and a head full of hair. After a quick eight hour labor, our world has forever been changed and we are so in love with our daughter.

Earthquake Cake


The First Year Blog is sorta kinda super awesome for coming up with the recipe. It's amazing!!! Who would've thought to put all of these delicious ingredients together? Obviously not me or I would be able to take credit for this concoction. Thank you The First Year Blog for this fabulous recipe! My life is forever changed!

Earthquake Cake
Ingredients
  • 1 box German Chocolate Cake Mix (do not prepare as directed on box, prepare as directed below)
  • 1/3 cup oil
  • 3 eggs
  • 1 and 1/3 cup water
  • 2/3 cup shredded coconut
  • 2/3 cup chocolate chips
  • 1/2 cup chopped pecans
  • 1/2 cup butter
  • 8 oz cream cheese
  • 1 pound powdered sugar (3 and 3/4 cups)

Instructions
  1. Preheat the oven to 350 degrees F.
  2. Grease a 9 x 13 inch pan.
  3. Sprinkle the coconut, chocolate chips, and pecans on the bottom of the pan.
  4. Mix the german chocolate cake mix with the oil, eggs, and water.
  5. Pour the cake mix on top of the coconut/chocolate chip/pecan layer.
  6. In a saucepan, melt the butter and cream cheese.
  7. Beat in 1 pound of powdered sugar until it's smooth to the butter/cream cheese.
  8. Spread this mixture on top of the uncooked german chocolate cake in the pan, and swirl into the cake mix using a knife.
  9. Bake for 35-45 minutes. It is done when it doesn't wobble in the pan if you shake it. The toothpick test shouldn't work because the cake should be more gooey in nature.

Packing Your Diaper Bag

I always wondered why new moms seemed to have amazing arm muscles. Well, now I know that it's from lugging around diaper bags, strollers, car seats, babies, etc. Who needs to lift weights when you can just carry the three million baby accessories?

Before we get started, I want to share my adorable diaper bag! I'm obsessed!! Before we knew what we were having, I knew I wanted a Kate Spade diaper bag. I found this fabulous one and knew I had to have it if we had a girl! Sure enough, a girl it is! It's like this bag was so meant to be :)
The only problem is that it's an older bag and not available on the website or in stores. But, the shopping gods were with me one fateful day at TJMaxx. Yes, really, TJMaxx! I freaked out, grabbed it, and ran straight to the register to buy it before I was awakened from what seemed like the best dream ever. Bag...done! Now the hard part...what do I put in this thing?

After searching online and talking with other moms, here's what I've decided to put in my bag:

-diapers
-wipes
-changing pad
-diaper cream
-change of clothes
-pacifier
-toys
- bottles/formula
-blanket
-burp cloth
-nursing cover
-hand sanitizer
- diaper trash bags
- boogie wipes

As Taylor gets older and her needs change, the items in her diaper bag will also change. But at the newborn age, this is what I've decided to pack. If we go out for a long day of shopping or a day trip, I will definitely need to pack a few more items, but for our day to day around town adventures, these items are great.

Winter Reading

It's time to sit by the fire and enjoy some leisurely reading. Not like I'll be doing any leisurely reading with a newborn, but I figured I would share some of the books I've read in the past few months that I've really enjoyed.
 

1. BEAUTIFUL BOY
 
This is a touching story of a father's life with his drug addicted son.  Very touching and insightful novel. 

2. BOSSYPANTS
 
Oh Tina Fey! You always know how to make me laugh. A great, lighthearted book that will keep a smile on your face.

3. BORN ON A BLUE DAY
 
Such an amazing story of a brilliant human. Because I teach special education, I'm often drawn to books about individuals with disabilities. This book was fascinating! 

4.  DARK PLACES
 
After reading Gone Girl, I couldn't wait to read more by Gillian Flynn. This thriller will keep you up late turning the pages!

5.  LOOK ME IN THE EYE
 
I love all books by Augusten Burroughs, so when I found out his brother, John Elder Robinson, wrote a book, I knew I had to read it!  

6.  A MILLION LITTLE PIECES
 
This book is one of my favorites. Years ago it came out that the author wasn't truthful when writing this, but just go into it as if it were a fictional book. Regardless, it's a great read and remains one of my favorites.  

7.  WHITE GIRL PROBLEMS
 
OMG I couldn't stop laughing when reading this! It's ridiculously funny! 

8.  OUTLIERS
 
This is one of the most interesting books I've read. I'm looking forward to reading more from this author, Malcolm Gladwell. 

9.  REVENGE WEARS PRADA
 
I'm a huge fan of Lauren Weisberger and was super excited when this book came out!  It was fun tying up loose ends from The Devil Wears Prada.

10.  WHAT ALICE FORGOT
 
Love this author and this cute, girly book! A great, easy, fun read!

New Year's Resolution Book

I know we haven't even celebrated Christmas, but it's never too early to start thinking about New Years! It's just sneaks up every year! 
Two years ago we started a book with our New Year's resolutions. It's such a fun way to recap the year and look back at past years together and get a good laugh. The worksheet is nothing fancy and is short and sweet.

It's great to do as a couple, with kids, or in a large group. I can't believe 2013 is almost over already!

Throwback Thursday ~ Reindeer Games

I'm so sad I'm missing all of the holiday fun in my classroom! Here's a throwback of a fun game we played last year. 

Pin the nose on the reindeer can be played in your classroom, at home, or at a work party! My students absolutely loved it! Even though no one got close (including 6 adults!), we still had a blast trying!

Caution: Not as easy as I recall when I was a child!
